Friday Food 158 – Phoenix Balls

Friday Food is an occasional article about one of the more unusual food items to be found in Liuzhou that week. This week we are getting down with mythical birds and their balls.

Phoenix Balls 凤凰球

These delightful looking things are known as Phoenix Balls (凤凰球) and are available in packs of four from many supermarkets around town.

They are patties of roughly minced/chopped pork laced with globules of pig fat and topped with a salted egg yolk. Additional ingredients are more salt, sugar, rice wine and various preservatives.

They can be fried or  steamed. Much of that fat renders out leaving the pork meat nicely lubricated.

Here is one that was (slightly over-)fried.
