Friday Food 50 – Pig Skin Jelly

Friday food is a weekly article about one of the more unusual food items to be found in Liuzhou that week. This week, pig skin jelly.

You’ll have to go to a restaurant to find this one, unless you take the trouble to make it yourself. Pig skin jelly (猪皮冻 or 肉皮冻) is what it says. Pig skin is blanched, cleaned and any hair removed. It is then cut into small pieces and boiled for up to eight hours in water with garlic, scallion, ginger and, sometimes, ham. The skin mostly dissolves and the resulting liquid is strained to remove any solids, including impurities and undissolved skin. When cooled, the milky liquid forms a jelly which is cut into slices and served, usually with a dipping sauce of soy sauce, vinegar and coriander leaf (cilantro). It tastes much better than it sounds – or looks!
